  • 8 cups arugula (about 1 bag)
  • 1/2 large Heirloom tomato thinly sliced
  • 3 to 4 ripe, yet still firm, figs thinly sliced
  • 1 large burrata ball, or 4 small burrata balls
  • 2 to 3 slices prosciutto pulled apart
  • 1/4 cup walnut chopped
  • Freshly grounded black pepper to taste

  • 2 teaspoon crushed red pepper
  • 1 tablespoon Balsamic vinegar of Modena
  • 1 1/2 teaspoon honey
  • 1/4 teaspoon sea salt
  • 1/4 cup olive oil

For the dressing:

  • Add all the ingredients to a small bowl or mason jar with a lid, and whisk or shake until combined. Put to the side, and shake again before using.

For the salad:

  • Toss the bag of arugula into a large bowl. Add the tomato and fig slices.
  • Add the burrata. If you're using one large burrata ball, divide the ball into smaller pieces and scatter them over the salad. If you're using 4 burrata balls, divide each burrata ball in half and spread the halves over the salad.
  • Add the prosciutto slices and walnuts to the salad. Top with cracked pepper.
  • Add the salad dressing before serving.
