Make chia pudding by mixing 1/4 cup of chia seeds with 1 cup of coconut milk. Add 2 tablespoons of maple syrup, and 1 teaspoon of lime zest. Stir, spoon into 4 tiny containers, and let sit overnight in fridge.
Drain cashews and place in food processor.
Add 6 tablespoons coconut milk, 1/4 cup of lime juice, 4 tablespoons of maple syrup, 1 teaspoon matcha powder, and zest of one lime.
Blend until creamy and spoon onto top of chia pudding.
